The original Sarajevo recipe for ćevapi. Grill specialties you’ve never tried before: turkey ćevapi and skewers, sudžuk sausages, prosos sausages, and of course — the famous Sarajevo ćevap!
“Real Sarajevo ćevapi are made exclusively from beef, using the front cuts: flank or brisket, neck, and shoulder. Mutton is used in Sarajevo because people there are used to its flavor. In Belgrade, young people don’t like the taste of mutton,” says the old master, Radovan Rajić.
Ćevapi aren’t complete without real homemade lepinja. Authentic Sarajevo ćevap is served with half a flatbread, known as “deset u pola s lukom” (“ten in a half, with onions”). The meat mixture must rest, salted, for 48 hours before grilling.
